Norwegian Salmon with Kiwi Mango Salsa

Get a healthy dose of omega-3 fatty acids from this salmon dish!



Ingredients:
  • 4 Norwegian Salmon fillets
  • 3 tbsp butter, melted
  • ½ bunch basil leaves, chopped
  • 3 kiwi, peeled
  • 1 mango, peeled
  • 2 shallots
  • 1 jalapeño
  • 1 tbsp balsamic vinegar

Directions:

  1. Pre-heat oven at 180° and rack set in the middle
  2. Place salmon on a baking tray and brush with butter, then top with the chopped basil
  3. Place in oven for 13 minutes (actual oven temperatures vary and you may find you need more or less time according to your oven). Do not turn salmon while cooking
  4. While the salmon bakes, finely chop the kiwi, mango, shallots and jalapeño. Add the balsamic vinegar and mix together
  5. Plate the salmon with the salsa and serve with your favorite side dish
